Have them learn to crochet or knit. If you contact the Craft Yarn Council of America http://craftyarncouncil.com/DiscoverReso鈥?/a> (scroll down) they may be able to hook you up with a volunteer in your area that will teach for free as a part of his/her training as a professional teacher.
Also, see this link for some of the many benefits of knitting or crocheting: http://www.helium.com/items/291518-why-d鈥?/a>I'm looking for games, activities and arts and crafts for adults with intellectual disabilities in Day Program?

How about Gardening ? Assign one pot [or a garden plot/patch] to each person [or in pairs, if that works better], %26amp; let them choose their seeds/plants %26amp; care for it daily. For quicker results, you could start off with Herbs.
Besides knitting %26amp; crochet, you could try Quilting. Decide the size of block that you require %26amp; distribute the fabric. Each person can choose to draw, paint, sew, applique, embroider, adorn, ... as the fancy takes them. When all blocks are complete, get them sewn together to make a quilt. This can be gifted to somebody or displayed. You can also choose a favorite theme eg. Christmas, animals, flowers, etc.
Clay modeling? Improves motor skills. You can start off slowly %26amp; gradually build it up.
May be even Pottery? Making their own mugs, plates, bowls, vases %26amp; then decorating them !
Solving Puzzles - Crosswords, Search word, Hitori , Jumble word, Anagrams, Acrostics, Sudoku, Kakuro, Jigsaw, etc. etc. etc. You can do it as a group game on the board, with each person getting a turn, or individually ... customized to suit their intellectual capabilities.
You can create your own crosswords %26amp; puzzles too :

Make a Scrapbook together. Each person can bring their own pictures [you can choose a theme if you like, or make a scrapbook of all the adults in the program] %26amp; each gets a page to him/herself. They can decorate as they wish %26amp; write a few lines too. After all pages are completed, compile %26amp; bind.
Make Greeting Cards. You can get them to make a bunch of cards, one for each occasion for the next year, or only for a particular holiday/person. Some can write, some can draw, paint, glue stuff, etc. These can then be sent out to loved ones or, if made in ample numbers, sold.
Make Papier Mache articles.
Make Salt dough or Bread clay models.
Make potpourri sachets.
Make Stress Pillows - scented or otherwise.
You will some of these recipes/crafts at : http://www.kitchencraftsnmore.net/crafts鈥?/a>
Also try to get the group itself to suggest something they like %26amp; enjoy, instead of making the suggestions yourself. Motivate them through this little session so that they feel involved %26amp; in control. If the group/majority like the suggestion of an individual, try to take up that activity.
You could also check out some Autism-related sites for activities that can be modified %26amp; customized to adults.
"The out-of-sync child has fun" by Carol S Kranowitz is a good book with lots of activities geared to each developmental aspect/skill. Check it out %26amp; customize.
Hope these help?
All the very best %26amp; Have fun :-)
